Family Style Macaroni

We love one-pot wonders!  We have taken macaroni, a family favourite, and added some spice to the adult version.  Quick, easy and comforting!

Ingredients

Macaroni:

 

500g macaroni

 

1 tbsp olive oil

 

onion – diced

 

2 garlic cloves – crushed

 

200g cooked ham –  chopped

 

1 1/2 tsp dried mixed spice

 

1/2 tsp cayenne pepper

 

250 g cheddar cheese – grated

 

2 tomatoes – sliced

 

White sauce:

 

4 tbsp butter

 

4 tbsp  flour

 

2 cups milk

 

salt and pepper to taste

 

Toppings:

 

5 slices bread – processed to form crumbs

 

2 tbsp chopped parsley

Preheat the oven to 180 degrees Celsius.  Cook your macaroni according to the packet instructions.

Heat the olive oil, brown the onion and garlic. Kiddie portion – remove a tbsp of onion and garlic mixture into separate pan and add a heaped tbsp of cooked ham.  Sauté  for 30s.  Add the rest of the cooked ham and the cayenne paper to the onion and garlic mixture and sauté for 30s.

 White Sauce. Melt the butter and add the flour, mixing to form a paste.  Cook for 30s, remove from the heat and add the milk gradually while stirring.  Return to the heat and simmer for 5 min, stir continuously and season to taste.  Kiddie portion – before seasoning too heavily remove 2 tbsp of white sauce.

Kiddie portion – take the onion and garlic mixture, white sauce and fold in a pinch of mixed herbs, a tbsp of cheese and enough macaroni to fill the ramekin.  Fold in remaining macaroni, herbs, white sauce and half of the cheese(125 g).

Transfer to a buttered ovenproof dish and sprinkle with the remaining cheese.  Cover with sliced tomatoes and processed breadcrumbs.  Bake for approximately 45 min. Kiddie portion – transfer to ramekin, cover with breadcrumbs and bake for 15 min.
