Tried and Tested: The Best of Homemade Iced Tea

We all love a refreshing drink in the summer!  Something to take the edge off, preferably with alcohol.  We wanted something you could make from scratch for everyone to enjoy, so we let the idea of an alcoholic beverage slide and opted for the family friendly iced tea!

Rooibos, Ginger, Lime and Mint

You need:

 

  • 4 Rooibos tea bags and 1l water
  • 1tbsp of fresh ginger – peeled and finely sliced
  • peel from 1 lemon
  • small handful of mint leaves
  • 20ml honey
  • juice of one lemon
  • extra slices of lemon and mint to serve
What to do:

 

  1. Fill your jug with boiling water and add the tea bags.
  2. Add all the ingredients except the lemon juice and the honey, and allow it to infuse. You can leave it overnight or until the tea has cooled.
  3. Stir through the honey and add the lemon juice. Store in the fridge until you are ready to use it.
  4. Served chilled with ice, lemon slices and a few mint leaves.

Peach and Basil Iced Tea

You need:

 

4 Rooibos teabags and 1l of water

6 medium sized nectarines (and extra for serving) cut into chunks

15 basil leaves (and extra for serving)

20ml honey

250 ml water

1 ring of fresh pineapple, cut into chunks

What to do:

 

  1. Fill your jug with boiling water and add the tea bags.
  2. Make your syrup by bringing the chunks of nectarines, basil and honey to boil in 250ml water.  Simmer for around 8 minutes.
  3. Transfer your syrup to a blender, add 1 ring of fresh pineapple chunks and blend until smooth.
  4. Strain the mixture through a sieve.
  5. Add to your tea mixture and chill.
  6. Serve chilled wit basil leaves and slices of nectarines
